Ingredients
- 24 ladyfinger biscuits
- 1 1/2 cups fresh peaches, diced (or canned, drained)
- 1/2 cup peach nectar or reserved peach syrup
- 1 tbsp lemon juice
- 250 g mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- Extra peach slices for garnish
Instructions
- In a small bowl, combine peach nectar and lemon juice.
- Whip heavy cream until soft peaks form.
- In another bowl, beat mascarpone, powdered sugar, and vanilla extract until smooth.
- Fold whipped cream gently into mascarpone mixture.
- Quickly dip each ladyfinger into the peach syrup mixture.
- Arrange a layer of soaked ladyfingers in a serving dish.
- Spread half of the mascarpone cream over the layer.
- Sprinkle half of the diced peaches evenly over the cream.
- Repeat layers with remaining ladyfingers, cream, and peaches.
- Garnish with extra peach slices.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- Do not oversoak ladyfingers to prevent sogginess.
- Chill overnight for best flavor and texture.
- Add a splash of peach liqueur for a more intense flavor.
