Ingredients
- 2 flatbreads or naan
- 1/2 cup basil pesto
- 1 cup cooked chicken breast, shredded or diced
- 1 cup shredded mozzarella cheese
- 1/4 cup cherry tomatoes, halved
- 2 tablespoons red onion, thinly sliced
- 2 tablespoons olive oil
- Fresh basil leaves, for garnish
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Place flatbreads on a baking sheet and brush lightly with olive oil.
- Spread pesto evenly over each flatbread.
- Top with chicken, mozzarella cheese, cherry tomatoes, and red onion.
- Season with salt and pepper.
- Bake for 8–10 minutes, or until cheese is melted and bubbly.
- Remove from oven, garnish with fresh basil leaves, and slice before serving.
Notes
- You can use store-bought or homemade pesto.
- Try adding arugula after baking for extra freshness.
- Substitute mozzarella with goat cheese or feta for a different flavor profile.
