Ingredients

  • 2 cups cooked, shredded chicken
  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 3/4 cup milk or half-and-half
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 1 package (11 oz) Red Lobster Cheddar Bay Biscuit mix
  • 3/4 cup water (for biscuit mix)
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp melted butter
  • 1/4 tsp garlic powder
  • 1 tsp parsley flakes (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, melt butter over medium heat. Add diced onion and cook for 3–4 minutes until soft and translucent. Stir in garlic and cook 1 minute longer.
  3. Sprinkle flour over the onions and stir for 1–2 minutes to create a roux.
  4. Gradually whisk in chicken broth and milk, cooking until the mixture thickens, about 3–5 minutes.
  5. Add shredded chicken, frozen vegetables, salt, pepper, and thyme. Stir well to combine and simmer for 2 minutes. Pour mixture into the prepared baking dish.
  6. In a separate bowl, prepare the Cheddar Bay Biscuit topping by combining biscuit mix, water, and shredded cheddar cheese until just blended.
  7. Drop spoonfuls of biscuit dough evenly over the chicken filling (it will spread slightly as it bakes).
  8. Bake uncovered for 25–30 minutes, or until biscuits are golden brown and the filling is bubbling.
  9. In a small bowl, mix melted butter with garlic powder and brush over the baked biscuits. Sprinkle with parsley flakes if desired.
  10. Let cool for 5 minutes before serving warm.
