This Red Lobster Biscuit Chicken Pot Pie combines the creamy, savory filling of a classic chicken pot pie with the irresistible cheddar bay biscuit topping from Red Lobster — a comforting, flavor-packed twist on a family favorite.
Ingredients
- 2 cups cooked, shredded chicken
- 2 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 3/4 cup milk or half-and-half
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 1 package (11 oz) Red Lobster Cheddar Bay Biscuit mix
- 3/4 cup water (for biscuit mix)
- 1/2 cup shredded cheddar cheese
- 2 tbsp melted butter
- 1/4 tsp garlic powder
- 1 tsp parsley flakes (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet, melt butter over medium heat. Add diced onion and cook for 3–4 minutes until soft and translucent. Stir in garlic and cook 1 minute longer.
- Sprinkle flour over the onions and stir for 1–2 minutes to create a roux.
- Gradually whisk in chicken broth and milk, cooking until the mixture thickens, about 3–5 minutes.
- Add shredded chicken, frozen vegetables, salt, pepper, and thyme. Stir well to combine and simmer for 2 minutes. Pour mixture into the prepared baking dish.
- In a separate bowl, prepare the Cheddar Bay Biscuit topping by combining biscuit mix, water, and shredded cheddar cheese until just blended.
- Drop spoonfuls of biscuit dough evenly over the chicken filling (it will spread slightly as it bakes).
- Bake uncovered for 25–30 minutes, or until biscuits are golden brown and the filling is bubbling.
- In a small bowl, mix melted butter with garlic powder and brush over the baked biscuits. Sprinkle with parsley flakes if desired.
- Let cool for 5 minutes before serving warm.

- Use rotisserie chicken to save time.
