Description

A rich and aromatic rice dish made with golden caramelized onions and buttery goodness, perfect as a comforting side or a base for hearty mains.


Ingredients

  • 2 cups long-grain white rice, rinsed
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, finely sliced
  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon turmeric (for golden color)
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Rinse the rice under cold water until the water runs clear and set aside.
  2. In a large skillet or saucepan, heat the olive oil and 2 tablespoons of butter over medium heat.
  3. Add the sliced onions and cook slowly, stirring often, until they turn deep golden brown and caramelized, about 15–20 minutes.
  4. Stir in the minced garlic and cook for another 1–2 minutes until fragrant.
  5. Add the rice to the pan and toast for 2–3 minutes, stirring to coat it well with the butter and onions.
  6. Sprinkle in the turmeric, salt, and pepper, then pour in the broth.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 15–18 minutes until the rice is tender and the liquid is absorbed.
  8. Remove from heat and let sit, covered, for 5 minutes.
  9. Fluff with a fork, stir in the remaining tablespoon of butter, and garnish with parsley before serving.

  • For extra flavor, use caramelized shallots instead of onions.
  • Substitute ghee for butter for a nutty aroma.
