Description
A classic, juicy roast beef seasoned simply and roasted until tender, perfect for Sunday dinners, sandwiches, or meal prep.
Ingredients
- 3 lb (1.4 kg) beef chuck roast or top round
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme or rosemary
- 1 cup beef broth
Instructions
- Preheat oven to 160°C (325°F).
- Pat roast dry with paper towels.
- Rub roast all over with olive oil.
- Season evenly with salt, pepper, garlic powder, onion powder, and herbs.
- Place roast in a roasting pan and pour beef broth into the bottom of the pan.
- Cover tightly with foil.
- Roast for 2.5–3 hours until tender.
- Remove from oven and let rest 15 minutes before slicing.
- Slice against the grain and serve with pan juices.

- Low and slow cooking keeps the roast tender.
- Use a meat thermometer for desired doneness.
