- 1 cup fresh spinach leaves
- 1/2 cup roasted red peppers, sliced
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.

- Heat olive oil in a skillet over medium-high heat. Sear chicken on each side for 2–3 minutes until golden.
- Transfer chicken to the prepared baking dish and bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven, discard toothpicks, and let rest for 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, drizzle with balsamic glaze before serving.
- Can substitute provolone or fontina for mozzarella.
- Use jarred roasted red peppers for convenience.
- Pairs well with pasta, rice, or a fresh salad.
