Ingredients
- For the Sugar Cookies:
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup powdered sugar
- 1 large egg
- 2 tsp vanilla extract
- For the Vanilla Filling:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tbsp heavy cream or milk
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Make the Cookies: Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, cream together butter, granulated sugar, and powdered sugar until light and fluffy, about 2–3 minutes.
- Add egg and vanilla extract; beat until well combined.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Flatten slightly with the bottom of a glass.
- Bake for 9–11 minutes or until the edges are just beginning to turn golden. Let cool completely on a wire rack.
- Make the Vanilla Filling: Beat butter in a bowl until smooth. Gradually add powdered sugar, then mix in vanilla, cream, and salt until fluffy. Add more cream if needed for desired consistency.
- Assemble: Pipe or spread about 1 tablespoon of filling onto the flat side of one cookie. Gently press another cookie on top to create a sandwich.
- Repeat with remaining cookies and filling. Store in an airtight container.
