Description
A hearty one-pan meal featuring savory sausage sautéed with sweet onions and colorful bell peppers, served over fluffy rice for a comforting and satisfying dish.
Ingredients
- 1 lb (450 g) smoked sausage or Italian sausage, sliced
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp black pepper
- Salt to taste
- 2 cups cooked white rice
- Fresh parsley or green onions for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned; remove and set aside.
- In the same skillet, add onions and bell peppers; sauté for 5–7 minutes until softened.
- Add garlic, paprika, oregano, salt, and pepper; cook for 30 seconds until fragrant.
- Return sausage to the skillet and toss everything together until heated through.
- Spoon sausage and pepper mixture over cooked rice.
- Garnish with fresh parsley or green onions if desired and serve warm.
Notes
- Use spicy sausage for extra heat.
- Brown rice or jasmine rice works well as a base.
- Add a splash of chicken broth or tomato sauce for extra moisture.
