Ingredients

  • 1 lb (450 g) smoked sausage or Italian sausage, sliced
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • Salt to taste
  • 2 cups cooked white rice
  • Fresh parsley or green onions for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned; remove and set aside.
  3. In the same skillet, add onions and bell peppers; sauté for 5–7 minutes until softened.
  4. Add garlic, paprika, oregano, salt, and pepper; cook for 30 seconds until fragrant.
  5. Return sausage to the skillet and toss everything together until heated through.
  6. Spoon sausage and pepper mixture over cooked rice.
  7. Garnish with fresh parsley or green onions if desired and serve warm.
