Description
Scalloped Sweet Potatoes are a creamy, cheesy, and comforting side dish made with thinly sliced sweet potatoes layered with a rich cream sauce and baked until golden and bubbly.
Ingredients
- 3 lbs sweet potatoes, peeled and thinly sliced
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 2 cups heavy cream
- 1 cup whole milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 1/2 cups shredded Gruyère cheese (or cheddar, divided)
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
- In a saucepan over medium heat, melt butter and sauté garlic until fragrant, about 1 minute.
- Stir in heavy cream, milk, salt, pepper, paprika, and thyme. Simmer gently for 3–4 minutes, then remove from heat.
- Arrange half of the sliced sweet potatoes in the prepared baking dish. Pour half of the cream mixture over them and sprinkle with half of the cheeses.
- Layer remaining sweet potatoes, then pour over remaining cream mixture and top with the rest of the cheeses.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 20–25 minutes, until potatoes are tender and top is golden brown.
- Let rest for 10 minutes before serving. Garnish with chopped parsley.
Notes
- Use a mandoline for evenly thin slices.
- Can be made ahead and reheated the next day.
- Swap Gruyère for mozzarella, cheddar, or fontina based on preference.
- Pairs perfectly with roasted meats or holiday dinners.
