Description

Scalloped Sweet Potatoes are a creamy, cheesy, and comforting side dish made with thinly sliced sweet potatoes layered with a rich cream sauce and baked until golden and bubbly.


Ingredients

  • 3 lbs sweet potatoes, peeled and thinly sliced
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 1/2 cups shredded Gruyère cheese (or cheddar, divided)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
  2. In a saucepan over medium heat, melt butter and sauté garlic until fragrant, about 1 minute.
  3. Stir in heavy cream, milk, salt, pepper, paprika, and thyme. Simmer gently for 3–4 minutes, then remove from heat.
  4. Arrange half of the sliced sweet potatoes in the prepared baking dish. Pour half of the cream mixture over them and sprinkle with half of the cheeses.
  5. Layer remaining sweet potatoes, then pour over remaining cream mixture and top with the rest of the cheeses.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 20–25 minutes, until potatoes are tender and top is golden brown.
  7. Let rest for 10 minutes before serving. Garnish with chopped parsley.

Notes

  • Use a mandoline for evenly thin slices.
  • Can be made ahead and reheated the next day.
  • Swap Gruyère for mozzarella, cheddar, or fontina based on preference.
