Description

A classic Italian dessert with a luxuriously smooth and creamy texture, this silky vanilla panna cotta is lightly sweetened and delicately set for an elegant finish.


Ingredients

  • 2 cups (480 ml) heavy cream
  • 1/2 cup (120 ml) whole milk
  • 1/2 cup (100 g) granulated sugar
  • 1 tbsp vanilla extract or 1 vanilla bean, split
  • 2 1/4 tsp unflavored gelatin powder
  • 3 tbsp cold water
  • Pinch of salt


Instructions

  1. In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes.
  2. In a saucepan, combine cream, milk, sugar, vanilla, and salt.
  3. Heat gently over medium heat until sugar dissolves and mixture is hot but not boiling.
  4. Remove from heat and stir in bloomed gelatin until completely dissolved.
  5. Strain mixture if using a vanilla bean.
  6. Pour into ramekins or molds.
  7. Cool slightly, then refrigerate for at least 4 hours until set.
  8. Serve chilled, unmolded or straight from the ramekin.

Notes

  • Do not boil the cream or the gelatin may not set properly.
  • Serve with fresh berries, fruit coulis, or caramel sauce.
  • Can be made up to 2 days in advance.
