Description
Slow Cooker Beef & Noodles is a hearty comfort food dish made with tender beef simmered in a rich broth and served with egg noodles for a warm, filling meal.
Ingredients
- 2 lbs beef chuck roast
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 bay leaves
- 12 oz egg noodles
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Season beef with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear beef on all sides until browned, about 3–4 minutes per side.
- Transfer beef to a slow cooker. Add onion, garlic, beef broth, Worcestershire sauce, thyme, parsley, pepper, and bay leaves.
- Cover and cook on LOW for 7–8 hours, or HIGH for 4–5 hours, until beef is tender and easily shredded.
- Remove beef from slow cooker, shred with two forks, and return to the pot.
- Stir in egg noodles and cook on HIGH for 20–25 minutes, or until noodles are tender. Stir occasionally.
- If a thicker sauce is desired, stir in cornstarch slurry and cook for 5 minutes until thickened.
- Garnish with fresh parsley and serve warm.
Notes
- Can substitute stew meat or short ribs for chuck roast.
- Use frozen egg noodles for a chewier texture.
- Pairs well with biscuits or cornbread.
- Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
