Description

Slow Cooker Beef & Noodles is a hearty comfort food dish made with tender beef simmered in a rich broth and served with egg noodles for a warm, filling meal.


Ingredients

  • 2 lbs beef chuck roast
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 bay leaves
  • 12 oz egg noodles
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season beef with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear beef on all sides until browned, about 3–4 minutes per side.
  2. Transfer beef to a slow cooker. Add onion, garlic, beef broth, Worcestershire sauce, thyme, parsley, pepper, and bay leaves.
  3. Cover and cook on LOW for 7–8 hours, or HIGH for 4–5 hours, until beef is tender and easily shredded.
  4. Remove beef from slow cooker, shred with two forks, and return to the pot.
  5. Stir in egg noodles and cook on HIGH for 20–25 minutes, or until noodles are tender. Stir occasionally.
  6. If a thicker sauce is desired, stir in cornstarch slurry and cook for 5 minutes until thickened.
  7. Garnish with fresh parsley and serve warm.

Notes

  • Can substitute stew meat or short ribs for chuck roast.
  • Use frozen egg noodles for a chewier texture.
  • Pairs well with biscuits or cornbread.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
