Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Lightly grease the slow cooker insert with olive oil.
  2. Add the chopped onion and minced garlic to the bottom of the slow cooker.
  3. Place the chicken on top and season with salt, pepper, oregano, thyme, and rosemary.
  4. Pour in the chicken broth, then add the lemon zest and lemon juice.
  5. Cover and cook on LOW for 3 hours.
  6. Stir in the uncooked rice, ensuring it is submerged in the liquid.
  7. Cover and continue cooking on LOW for another 1 to 1.5 hours, until the rice is tender and the chicken is fully cooked.
  8. Gently fluff the rice, garnish with fresh parsley, and serve warm.
