Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1 lemon, zested and juiced
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Lightly grease the slow cooker insert with olive oil.
- Add the chopped onion and minced garlic to the bottom of the slow cooker.
- Place the chicken on top and season with salt, pepper, oregano, thyme, and rosemary.
- Pour in the chicken broth, then add the lemon zest and lemon juice.
- Cover and cook on LOW for 3 hours.
- Stir in the uncooked rice, ensuring it is submerged in the liquid.
- Cover and continue cooking on LOW for another 1 to 1.5 hours, until the rice is tender and the chicken is fully cooked.
- Gently fluff the rice, garnish with fresh parsley, and serve warm.
Notes
- For extra flavor, sear the chicken briefly before adding it to the slow cooker.
- You can substitute brown rice, but cooking time will increase.
