Description

A comforting and flavorful slow cooker dish featuring tender chicken, fluffy rice, and fresh lemon herb seasoning for an easy one-pot meal.


Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • 1 1/2 cups long-grain white rice, rinsed
  • 3 cups low-sodium chicken broth
  • 1/2 cup lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp rosemary
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Lemon slices, for garnish (optional)


Instructions

  1. Season chicken with paprika, salt, and black pepper.
  2. In a skillet, heat olive oil over medium heat and sear chicken on both sides for 2–3 minutes until lightly golden (optional but recommended).
  3. Place rice, chicken broth, lemon juice, lemon zest, garlic, onion, oregano, thyme, and rosemary into the slow cooker. Stir to combine.
  4. Arrange chicken on top of the rice mixture.
  5. Cover and cook on LOW for 5–6 hours or on HIGH for 2 1/2–3 hours, until rice is tender and chicken is fully cooked (165°F internal temperature).
  6. Fluff rice with a fork before serving.
  7. Garnish with parsley and lemon slices, then serve warm.

Notes

  • For extra creaminess, stir in 1/4 cup grated Parmesan before serving.
  • Brown rice may be used but will require longer cooking time.
  • Pairs well with roasted vegetables or a fresh salad.
