Description
A comforting and flavorful slow cooker dish featuring tender chicken, fluffy rice, and fresh lemon herb seasoning for an easy one-pot meal.
Ingredients
- 4 boneless skinless chicken breasts (or thighs)
- 1 1/2 cups long-grain white rice, rinsed
- 3 cups low-sodium chicken broth
- 1/2 cup lemon juice (freshly squeezed)
- 1 tbsp lemon zest
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp rosemary
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped (for garnish)
- Lemon slices, for garnish (optional)
Instructions
- Season chicken with paprika, salt, and black pepper.
- In a skillet, heat olive oil over medium heat and sear chicken on both sides for 2–3 minutes until lightly golden (optional but recommended).
- Place rice, chicken broth, lemon juice, lemon zest, garlic, onion, oregano, thyme, and rosemary into the slow cooker. Stir to combine.
- Arrange chicken on top of the rice mixture.
- Cover and cook on LOW for 5–6 hours or on HIGH for 2 1/2–3 hours, until rice is tender and chicken is fully cooked (165°F internal temperature).
- Fluff rice with a fork before serving.
- Garnish with parsley and lemon slices, then serve warm.
Notes
- For extra creaminess, stir in 1/4 cup grated Parmesan before serving.
- Brown rice may be used but will require longer cooking time.
- Pairs well with roasted vegetables or a fresh salad.
