Description

A bold and hearty meatloaf layered with three kinds of cheese and wrapped in smoky bacon, baked until juicy and irresistibly cheesy.


Ingredients

  • 1 1/2 lb (680 g) ground beef
  • 1/2 lb (225 g) ground pork
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded provolone or Swiss cheese
  • 1012 slices smoked bacon
  • 1/4 cup ketchup or BBQ sauce (optional glaze)


Instructions

  1. Preheat oven to 180°C (350°F) and line a loaf pan or baking sheet with foil.
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, eggs, onion, garlic, salt, pepper, smoked paprika, and Worcestershire sauce.
  3. Mix gently until just combined.
  4. Press half of the meat mixture into the pan.
  5. Layer cheddar, mozzarella, and provolone evenly over the meat.
  6. Top with remaining meat mixture and press gently to seal.
  7. Wrap the entire loaf with bacon slices, tucking ends underneath.
  8. Brush with ketchup or BBQ sauce if using.
  9. Bake for 60–70 minutes until cooked through and bacon is crispy.
  10. Rest 10 minutes before slicing and serving.

Notes

  • Do not overmix meat to keep meatloaf tender.
  • Use a meat thermometer for doneness (71°C / 160°F).
  • Excellent served with mashed potatoes or roasted vegetables.
