Description

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 8 oz (225 g) cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • Butter or oil for cooking


Instructions

  1. In a bowl, whisk flour, eggs, milk, melted butter, sugar, and salt until smooth.
  2. Heat a nonstick skillet over medium heat and lightly grease.
  3. Pour a small amount of batter into the pan, swirling to coat evenly.
  4. Cook for 1–2 minutes until edges lift, then flip and cook 30 seconds more.
  5. Repeat with remaining batter and set crepes aside.
  6. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  7. Spread filling onto each crepe and roll or fold.
  8. Serve warm or chilled.

Notes

  • Rest batter 10 minutes for softer crepes.
  • Top with berries, honey, or powdered sugar.
  • Filling can be made ahead and refrigerated.
