Delicate, soft crepes filled with a lightly sweetened cream cheese filling, perfect for breakfast, brunch, or an elegant dessert.
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tbsp melted butter
- 1 tbsp sugar
- 1/4 tsp salt
- 8 oz (225 g) cream cheese, softened
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- Butter or oil for cooking
Instructions
- In a bowl, whisk flour, eggs, milk, melted butter, sugar, and salt until smooth.
- Heat a nonstick skillet over medium heat and lightly grease.
- Pour a small amount of batter into the pan, swirling to coat evenly.
- Cook for 1–2 minutes until edges lift, then flip and cook 30 seconds more.
- Repeat with remaining batter and set crepes aside.
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Spread filling onto each crepe and roll or fold.
- Serve warm or chilled.
Notes
- Rest batter 10 minutes for softer crepes.
- Top with berries, honey, or powdered sugar.
- Filling can be made ahead and refrigerated.
