Description

Spiced Apple Cider Donut Loaf is a cozy, moist quick bread infused with warm fall spices, apple cider, and a cinnamon-sugar coating that mimics the flavor of classic apple cider donuts — perfect for breakfast or an autumn dessert.


Ingredients

    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon salt
    • 1/2 cup (115g) unsalted butter, softened
    • 3/4 cup brown sugar, packed
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup reduced apple cider*
    • 1/4 cup sour cream (or Greek yogurt)

For the Cinnamon Sugar Coating:

  • 2 tablespoons melted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon


Instructions

  1. To reduce apple cider: Simmer 1 cup of apple cider in a small saucepan over medium heat until it reduces to 1/2 cup (about 10–15 minutes). Let cool completely before using.
  2. Preheat oven to 175°C (350°F). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  4. In a large bowl, beat butter and brown sugar together until light and fluffy, about 2 minutes.
  5. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  6. Mix in reduced apple cider and sour cream until well combined.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined — do not overmix.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for 10 minutes, then remove and place on a wire rack.
  11. While still warm, brush the loaf with melted butter and sprinkle (or roll) generously with the cinnamon-sugar mixture.
  12. Let cool slightly before slicing. Serve warm or at room temperature.

Notes

  • Reducing the apple cider concentrates its flavor — don’t skip this step for the best taste.
  • To make it extra indulgent, drizzle with a maple glaze or cream cheese icing.
