Description
Spiced Apple Cider Donut Loaf is a cozy, moist quick bread infused with warm fall spices, apple cider, and a cinnamon-sugar coating that mimics the flavor of classic apple cider donuts — perfect for breakfast or an autumn dessert.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup reduced apple cider*
- 1/4 cup sour cream (or Greek yogurt)
For the Cinnamon Sugar Coating:
- 2 tablespoons melted butter
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
Instructions
- To reduce apple cider: Simmer 1 cup of apple cider in a small saucepan over medium heat until it reduces to 1/2 cup (about 10–15 minutes). Let cool completely before using.
- Preheat oven to 175°C (350°F). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
- In a large bowl, beat butter and brown sugar together until light and fluffy, about 2 minutes.
- Add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Mix in reduced apple cider and sour cream until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined — do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then remove and place on a wire rack.
- While still warm, brush the loaf with melted butter and sprinkle (or roll) generously with the cinnamon-sugar mixture.
- Let cool slightly before slicing. Serve warm or at room temperature.
Notes
- Reducing the apple cider concentrates its flavor — don’t skip this step for the best taste.
- To make it extra indulgent, drizzle with a maple glaze or cream cheese icing.
- This loaf freezes beautifully — wrap tightly and thaw overnight before serving.
