Description

Ingredients

  • 1 lb flank steak or sirloin steak
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 tbsp butter
  • 1 large onion, thinly sliced
  • 4 slices provolone or Swiss cheese
  • 2 ciabatta rolls or 1 large baguette, halved
  • 1 cup arugula or baby spinach (optional)
  • For Garlic Aioli:
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tsp lemon juice
  • 1/4 tsp Dijon mustard
  • Salt and pepper to taste


Instructions

  1. Prepare the garlic aioli: In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper. Chill until ready to use.
  2. Season steak with salt, pepper, and smoked paprika. Let rest at room temperature for 20 minutes before cooking.
  3. Heat olive oil in a cast-iron skillet over medium-high heat. Sear steak for 3–4 minutes per side, depending on thickness, until desired doneness (130°F for medium-rare). Remove and let rest for 5–10 minutes before slicing thinly against the grain.
  4. In the same skillet, melt butter and add sliced onions. Cook over medium heat for 10–12 minutes, stirring occasionally, until caramelized and golden brown.
  5. Toast ciabatta rolls or baguette halves in the oven or skillet until lightly crisp.
  6. Spread a generous layer of garlic aioli on both sides of the bread.
  7. Layer sliced steak, caramelized onions, and cheese. If desired, place sandwiches under the broiler for 1–2 minutes to melt the cheese.
  8. Top with arugula or spinach, close the sandwich, and slice in half to serve.
