Description

Strawberry Cheesecake Cookies are soft, buttery cookies filled with creamy cheesecake centers and bursts of sweet strawberry flavor — a bakery-style treat that combines the best of cookies and cheesecake in every bite.


Ingredients

    • 1/2 cup (115g) unsalted butter, softened
    • 3/4 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 3/4 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 cup freeze-dried strawberries, crushed into powder

For the Cheesecake Filling:

    • 115g (4 oz) cream cheese, softened
    • 2 tablespoons powdered sugar
    • 1/4 teaspoon vanilla extract

Optional Topping:

  • 2 tablespoons crushed freeze-dried strawberries
  • Powdered sugar, for dusting


Instructions

  1. Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Scoop small 1/2 teaspoon portions onto a plate and freeze for 20 minutes.
  3. In a large mixing bowl, beat butter and granulated sugar together until light and fluffy (about 2–3 minutes).
  4. Add the egg and vanilla, and mix until well combined.
  5. In another bowl, whisk together flour, baking powder, salt, and crushed freeze-dried strawberries.
  6. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms. Chill dough for 15 minutes if too sticky.
  7. Scoop out 1 1/2 tablespoon-sized portions of dough. Flatten each slightly, place a frozen cream cheese ball in the center, and fold the dough around it to seal.
  8. Arrange cookies 2 inches apart on the prepared baking sheet.
  9. Bake for 11–13 minutes, or until edges are lightly golden and centers are just set.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. Dust with powdered sugar and sprinkle with extra strawberry crumbs before serving.

  • Keep cheesecake filling frozen until ready to use to make shaping easier.
