Description

Strawberry shortcake sushi is a fun dessert twist on sushi, made with soft sponge cake, sweetened cream cheese, fresh strawberries, and rolled like sushi before slicing into bite-sized pieces.


Ingredients

  • 1 vanilla sponge cake sheet (about 10×12 inches)
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup whipped cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons strawberry jam
  • Powdered sugar for dusting (optional)


Instructions

  1. In a bowl, mix the cream cheese, powdered sugar, vanilla extract, and whipped cream until smooth and fluffy.
  2. Lay the sponge cake sheet flat on a clean surface or parchment paper.
  3. Spread an even layer of the cream mixture over the cake, leaving about 1 inch uncovered on one edge.
  4. Spread a thin layer of strawberry jam over the cream.
  5. Arrange sliced strawberries evenly across the cake.
  6. Starting from the filled edge, gently roll the cake tightly into a log, similar to rolling sushi.
  7. Chill the roll in the refrigerator for 20–30 minutes to firm up.
  8. Using a sharp knife, slice the roll into 1-inch pieces.
  9. Dust with powdered sugar if desired and serve.

Notes

  • Use very fresh, soft sponge cake to prevent cracking.
  • Chilling before slicing helps achieve cleaner cuts.
