Description
Strawberry shortcake sushi is a fun dessert twist on sushi, made with soft sponge cake, sweetened cream cheese, fresh strawberries, and rolled like sushi before slicing into bite-sized pieces.
Ingredients
- 1 vanilla sponge cake sheet (about 10×12 inches)
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup whipped cream
- 1 teaspoon vanilla extract
- 2 tablespoons strawberry jam
- Powdered sugar for dusting (optional)
Instructions
- In a bowl, mix the cream cheese, powdered sugar, vanilla extract, and whipped cream until smooth and fluffy.
- Lay the sponge cake sheet flat on a clean surface or parchment paper.
- Spread an even layer of the cream mixture over the cake, leaving about 1 inch uncovered on one edge.
- Spread a thin layer of strawberry jam over the cream.
- Arrange sliced strawberries evenly across the cake.
- Starting from the filled edge, gently roll the cake tightly into a log, similar to rolling sushi.
- Chill the roll in the refrigerator for 20–30 minutes to firm up.
- Using a sharp knife, slice the roll into 1-inch pieces.
- Dust with powdered sugar if desired and serve.
Notes
- Use very fresh, soft sponge cake to prevent cracking.
- Chilling before slicing helps achieve cleaner cuts.
- You can substitute strawberries with other berries if desired.
