Description

Stuffed Mashed Potato Nests are golden, crispy nests made from creamy mashed potatoes and filled with gooey cheese, bacon, and herbs. These adorable, flavorful bites make the perfect appetizer, brunch dish, or creative side for holidays and family dinners.

Ingredients

    • 3 cups mashed potatoes (leftover or freshly made)
    • 1 large egg
    • 1/2 cup shredded cheddar cheese
    • 2 tablespoons butter, melted
    • Salt and black pepper, to taste
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon paprika

For the Filling:

  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons sour cream
  • 1 tablespoon chopped green onions or parsley

Instructions

  1. Preheat oven to 200°C (400°F) and lightly grease a 12-cup muffin tin.
  2. In a large bowl, combine mashed potatoes, egg, cheddar cheese, melted butter, garlic powder, paprika, salt, and pepper. Mix until smooth and creamy.
  3. Scoop about 2 tablespoons of the potato mixture into each muffin cup and press along the sides and bottom to form a nest shape.
  4. Bake for 15–20 minutes, or until the edges are golden and slightly crisp.
  5. Remove from the oven and use the back of a spoon to gently reshape the nest centers if needed.
  6. In a small bowl, mix bacon, cheese, sour cream, and green onions together for the filling.
  7. Fill each potato nest with a spoonful of the bacon-cheese mixture.
  8. Return to the oven and bake for an additional 5–7 minutes, until the cheese is melted and bubbly.
  9. Cool slightly before removing from the muffin tin. Garnish with extra green onions or parsley and serve warm.

Notes

  • For a vegetarian version, replace bacon with sautéed mushrooms or spinach.
  • You can make the nests ahead, refrigerate, and fill them just before reheating and serving.
  • Try different fillings like buffalo chicken, caramelized onions, or scrambled eggs for variety.
