Description
Tasty Banana Mochi is a soft and chewy snack made with glutinous rice flour and ripe bananas, lightly sweetened and perfectly tender with a delightful tropical flavor.
Ingredients
- 1 cup glutinous rice flour
- 2 ripe bananas, mashed
- 1/4 cup granulated sugar
- 1/4 cup coconut milk
- 1 tbsp vegetable oil
- 1/4 tsp salt
- 1/4 cup cornstarch (for dusting)
Instructions
- In a bowl, mix mashed bananas, sugar, coconut milk, oil, and salt until smooth.
- Add glutinous rice flour and stir until a sticky dough forms.
- Transfer mixture to a lightly greased heatproof dish and smooth the top.
- Steam over medium heat for 20–25 minutes until set and slightly translucent.
- Let cool until safe to handle.
- Dust a clean surface with cornstarch and turn out the mochi.
- Cut into bite-sized pieces, dusting with more cornstarch to prevent sticking.
- Serve fresh or store in an airtight container.
Notes
- Use very ripe bananas for natural sweetness and flavor.
- Mochi is best enjoyed the same day for optimal texture.
