Description

Tasty Tandoori Brussels Sprouts is a bold and flavorful side dish featuring roasted Brussels sprouts coated in a spiced yogurt tandoori marinade for a smoky, slightly spicy finish.


Ingredients

  • 500 g Brussels sprouts, trimmed and halved
  • 1/2 cup plain yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 1/2 tsp tandoori masala
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk yogurt, olive oil, lemon juice, garlic, ginger, tandoori masala, paprika, cumin, salt, and black pepper.
  3. Add Brussels sprouts and toss to coat evenly.
  4. Spread sprouts in a single layer on the prepared baking sheet.
  5. Roast for 20–25 minutes, turning halfway, until tender and lightly charred.
  6. Garnish with fresh cilantro before serving.

Notes

  • For extra crispiness, broil for the last 2–3 minutes.
  • Use Greek yogurt for a thicker coating.
  • Adjust spice level by increasing or reducing tandoori masala.
