Description
Teriyaki Pineapple Chicken is a sweet and savory dish made with juicy chicken cooked in a homemade teriyaki sauce with pineapple chunks for a tropical twist.
Ingredients
- 1 1/2 lbs boneless, skinless chicken breast (cut into bite-sized pieces)
- 2 tbsp vegetable oil
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup pineapple juice (from canned pineapple or fresh)
- 1/3 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp rice vinegar
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
- 2 green onions, chopped (for garnish)
- 1 tbsp sesame seeds (for garnish)
- Cooked white rice (for serving)
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, add soy sauce, pineapple juice, brown sugar, honey, garlic, ginger, and rice vinegar. Bring to a simmer.
- Whisk in cornstarch slurry and cook until sauce thickens, about 2 minutes.
- Add cooked chicken and pineapple chunks back into the skillet, tossing to coat evenly in the sauce.
- Simmer for 2–3 minutes to let flavors meld.
- Serve over rice and garnish with green onions and sesame seeds.
Notes
- Use chicken thighs for juicier results.
- Can substitute maple syrup for honey if desired.
- Fresh pineapple gives the best flavor, but canned works well too.
- Pair with steamed broccoli or snap peas for a complete meal.
