Description

Teriyaki Pineapple Chicken is a sweet and savory dish made with juicy chicken cooked in a homemade teriyaki sauce with pineapple chunks for a tropical twist.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breast (cut into bite-sized pieces)
  • 2 tbsp vegetable oil
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice (from canned pineapple or fresh)
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 2 green onions, chopped (for garnish)
  • 1 tbsp sesame seeds (for garnish)
  • Cooked white rice (for serving)


Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken pieces and cook until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
  3. In the same skillet, add soy sauce, pineapple juice, brown sugar, honey, garlic, ginger, and rice vinegar. Bring to a simmer.
  4. Whisk in cornstarch slurry and cook until sauce thickens, about 2 minutes.
  5. Add cooked chicken and pineapple chunks back into the skillet, tossing to coat evenly in the sauce.
  6. Simmer for 2–3 minutes to let flavors meld.
  7. Serve over rice and garnish with green onions and sesame seeds.

Notes

  • Use chicken thighs for juicier results.
  • Can substitute maple syrup for honey if desired.
  • Fresh pineapple gives the best flavor, but canned works well too.
  • Pair with steamed broccoli or snap peas for a complete meal.
