Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon instant espresso powder
  • 1/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brewed coffee, cooled
  • 1/2 cup powdered sugar (for rolling)


Instructions

  1. Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, salt, and espresso powder. Set aside.
  3. In a large bowl, beat butter and brown sugar until light and fluffy.
  4. Add egg, vanilla extract, and brewed coffee, mixing until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. The dough will be soft and slightly sticky.
  6. Cover the dough and chill in the refrigerator for at least 30 minutes (or up to 2 hours) for easier handling.
  7. Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
  8. Roll each dough ball generously in powdered sugar, coating all sides.
  9. Place on the prepared baking sheet, spacing about 2 inches apart.
  10. Bake for 10–12 minutes, or until the tops are cracked and the edges are set but soft.
  11. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  12. Dust lightly with extra powdered sugar if desired and serve with a cup of coffee.
