Ingredients
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon instant espresso powder
- 1/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup brewed coffee, cooled
- 1/2 cup powdered sugar (for rolling)
Instructions
- Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, cinnamon, salt, and espresso powder. Set aside.
- In a large bowl, beat butter and brown sugar until light and fluffy.
- Add egg, vanilla extract, and brewed coffee, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. The dough will be soft and slightly sticky.
- Cover the dough and chill in the refrigerator for at least 30 minutes (or up to 2 hours) for easier handling.
- Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
- Roll each dough ball generously in powdered sugar, coating all sides.
- Place on the prepared baking sheet, spacing about 2 inches apart.
- Bake for 10–12 minutes, or until the tops are cracked and the edges are set but soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Dust lightly with extra powdered sugar if desired and serve with a cup of coffee.
Notes
- For a stronger coffee flavor, increase espresso powder to 1 1/2 tablespoons.
- Store cookies in an airtight container for up to 5 days — they stay soft and chewy.
