Ingredients

  • 4 beef marrow bones (cut lengthwise)
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp lemon zest (optional)
  • Toasted baguette slices, for serving


Instructions

  1. Preheat oven to 220°C (425°F).
  2. Pat marrow bones dry and place cut-side up on a lined baking tray.
  3. Drizzle lightly with olive oil and season with salt and black pepper.
  4. Roast for 15–20 minutes until marrow is soft and slightly bubbling but not melted away.
  5. Remove from oven and rest for 2–3 minutes.
  6. Sprinkle with fresh parsley and lemon zest if using.
  7. Serve immediately with toasted baguette slices.
