The Best Roasted Beef Marrow Bones are rich, buttery, and deeply savory, roasted until perfectly tender and served with toasted bread, fresh herbs, and a sprinkle of sea salt.
Ingredients
- 4 beef marrow bones (cut lengthwise)
- 1 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1 tbsp olive oil
- 1 tbsp fresh parsley, finely chopped
- 1 tsp lemon zest (optional)
- Toasted baguette slices, for serving
Instructions
- Preheat oven to 220°C (425°F).
- Pat marrow bones dry and place cut-side up on a lined baking tray.
- Drizzle lightly with olive oil and season with salt and black pepper.
- Roast for 15–20 minutes until marrow is soft and slightly bubbling but not melted away.
- Remove from oven and rest for 2–3 minutes.
- Sprinkle with fresh parsley and lemon zest if using.
- Serve immediately with toasted baguette slices.
Notes
- Do not over-roast or the marrow will melt out.
- Serve with a simple salad or pickled onions to balance richness.
- Use high-quality grass-fed bones for best flavor.
