Description

An ultra-creamy, extra-cheesy pimento cheese spread loaded with sharp cheddar, smooth cream cheese, and sweet pimentos. Perfect as a dip, sandwich filling, or classic Southern appetizer.


Ingredients

  • 3 cups (300g) sharp cheddar cheese, freshly shredded
  • 1 cup (100g) extra-sharp cheddar cheese, freshly shredded
  • 4 oz (115g) cream cheese, softened
  • 1/2 cup (120ml) mayonnaise
  • 1 jar (4 oz) diced pimentos, drained
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste


Instructions

  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add mayonnaise and mix until fully combined and creamy.
  3. Stir in the shredded sharp cheddar and extra-sharp cheddar cheeses.
  4. Fold in the drained pimentos, garlic powder, onion powder, smoked paprika, and cayenne pepper if using.
  5. Season with salt and black pepper to taste.
  6. Mix until everything is evenly combined and creamy.
  7. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
  8. Serve chilled or at room temperature with crackers, bread, or vegetables.
