Ingredients
- 1 3/4 cups all-purpose flour
- 1 tablespoon poppy seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup plain yogurt
- 1/3 cup fresh grapefruit juice
- 1 tablespoon grapefruit zest
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 2 tablespoons fresh grapefruit juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch loaf pan.
- In a bowl whisk together flour, poppy seeds, baking powder, baking soda, and salt.
- In another bowl whisk sugar, eggs, vegetable oil, yogurt, grapefruit juice, grapefruit zest, and vanilla until smooth.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack.
- Mix powdered sugar with grapefruit juice to create a glaze.
- Drizzle the glaze over the cooled cake before serving.
Notes
- Use fresh grapefruit juice and zest for the brightest citrus flavor.
- Do not overmix the batter to keep the cake light and tender.
- The cake can be stored in an airtight container for up to 3 days.
- For extra citrus flavor, add a teaspoon of lemon zest.
