Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1/3 cup fresh grapefruit juice
  • 1 tablespoon grapefruit zest

  • 1/2 cup powdered sugar
  • 2 tablespoons fresh grapefruit juice (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch loaf pan.
  2. In a bowl whisk together flour, poppy seeds, baking powder, baking soda, and salt.
  3. In another bowl whisk sugar, eggs, vegetable oil, yogurt, grapefruit juice, grapefruit zest, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack.
  8. Mix powdered sugar with grapefruit juice to create a glaze.
  9. Drizzle the glaze over the cooled cake before serving.
