Description
Soft buttery shortbread cookies topped with rich caramel and coated in smooth milk chocolate, recreating the iconic Twix candy bar in cookie form.
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 cup soft caramel candies or dulce de leche
- 2 tbsp heavy cream (if using caramel candies)
- 12 oz milk chocolate, melted
- 1 tbsp vegetable oil (optional, for smoother coating)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter, sugar, and vanilla until light and fluffy.
- Add flour and salt, mixing until a soft dough forms.
- Roll dough into 1-inch balls and flatten slightly, or shape into small rectangles for a more Twix-like look.
- Place on baking sheet and bake for 10–12 minutes until edges are lightly golden. Cool completely.
- If using caramel candies, melt them with heavy cream over low heat until smooth. Spread about 1 teaspoon caramel onto each cookie.
- Chill for 10 minutes to set the caramel.
- Melt milk chocolate and add vegetable oil if desired for smoother dipping.
- Dip each cookie into the melted chocolate or spoon chocolate over the top. Allow excess to drip off.
- Place cookies on parchment and let set at room temperature or refrigerate until firm.
Notes
- Use dulce de leche for a thicker, richer caramel layer.
- Freezes well for up to 2 months.
- Try dark or white chocolate for variations.
- Chill cookies before dipping to help caramel stay in place.
