Description

A classic vanilla magic custard cake that bakes into three distinct layers: a fluffy top, creamy custard center, and dense cake base, all from one simple batter.


Ingredients

  • 4 large eggs, separated
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 2 cups whole milk, lukewarm
  • 1 tablespoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting


Instructions

  1. Preheat oven to 325°F (160°C) and grease an 8×8-inch baking dish.
  2. Beat egg whites until stiff peaks form; set aside.
  3. In a separate bowl, beat egg yolks with sugar until pale and creamy.
  4. Mix in melted butter and vanilla extract.
  5. Add flour and salt, mixing until smooth.
  6. Slowly pour in lukewarm milk while mixing until batter is thin.
  7. Gently fold in egg whites in three additions, leaving some lumps.
  8. Pour batter into the prepared baking dish.
  9. Bake for 45–50 minutes until the top is lightly golden and the center is set but jiggly.
  10. Cool completely, then dust with powdered sugar before slicing.

Notes

  • Do not overmix after adding egg whites.
