Description
A classic vanilla magic custard cake that bakes into three distinct layers: a fluffy top, creamy custard center, and dense cake base, all from one simple batter.
Ingredients
- 4 large eggs, separated
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted and cooled
- 2 cups whole milk, lukewarm
- 1 tablespoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- Powdered sugar, for dusting
Instructions
- Preheat oven to 325°F (160°C) and grease an 8×8-inch baking dish.
- Beat egg whites until stiff peaks form; set aside.
- In a separate bowl, beat egg yolks with sugar until pale and creamy.
- Mix in melted butter and vanilla extract.
- Add flour and salt, mixing until smooth.
- Slowly pour in lukewarm milk while mixing until batter is thin.
- Gently fold in egg whites in three additions, leaving some lumps.
- Pour batter into the prepared baking dish.
- Bake for 45–50 minutes until the top is lightly golden and the center is set but jiggly.
- Cool completely, then dust with powdered sugar before slicing.
Notes
- Do not overmix after adding egg whites.
- The cake sets fully as it cools.
- Chill before serving for cleaner slices.
