Description

Ingredients

  • 250g chocolate biscuits (like Oreos or Digestives)
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 1 cup heavy cream
  • 200g dark or milk chocolate, melted and cooled
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 150g dark chocolate (for ganache)
  • 1/2 cup heavy cream (for ganache)
  • Edible gold leaf, crushed pistachios, or chocolate shards (for garnish, optional)


Instructions

  1. Crush the chocolate biscuits into fine crumbs using a food processor or rolling pin.
  2. Mix crumbs with melted butter until evenly combined. Press firmly into the bottom of a 9-inch springform pan. Chill for 20 minutes to set.
  3. In a mixing bowl, beat cream cheese and powdered sugar until smooth.
  4. Add melted chocolate and vanilla extract, mixing until creamy.
  5. In a separate bowl, whip heavy cream until soft peaks form, then gently fold into the chocolate mixture.
  6. Pour the cheesecake mixture over the chilled crust and smooth the top. Refrigerate for at least 6 hours or overnight until firm.
