Ingredients
- 250g chocolate biscuits (like Oreos or Digestives)
- 100g unsalted butter, melted
- 400g cream cheese, softened
- 1 cup heavy cream
- 200g dark or milk chocolate, melted and cooled
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 150g dark chocolate (for ganache)
- 1/2 cup heavy cream (for ganache)
- Edible gold leaf, crushed pistachios, or chocolate shards (for garnish, optional)
Instructions
- Crush the chocolate biscuits into fine crumbs using a food processor or rolling pin.
- Mix crumbs with melted butter until evenly combined. Press firmly into the bottom of a 9-inch springform pan. Chill for 20 minutes to set.
- In a mixing bowl, beat cream cheese and powdered sugar until smooth.
- Add melted chocolate and vanilla extract, mixing until creamy.
- In a separate bowl, whip heavy cream until soft peaks form, then gently fold into the chocolate mixture.
- Pour the cheesecake mixture over the chilled crust and smooth the top. Refrigerate for at least 6 hours or overnight until firm.
- For the ganache: heat heavy cream in a saucepan until steaming (not boiling), then pour over chopped dark chocolate. Let sit for 2 minutes, then stir until glossy and smooth.
- Allow ganache to cool slightly, then pour over the chilled cheesecake. Tilt the pan gently to spread evenly.
- Refrigerate for 1 hour to set the ganache.
